Earlier this week it was 19 degrees in my town. Today, at present it is 72 degrees. I've just discovered this wonderful superfood and wanted to share it with you. Just like brown rice, black rice is packed with antioxidants and bran. Only black-rice bran contains anthocyanins which are purple and reddish pigments found in other super foods like blueberries. Both blueberries and black rice are good for you, however, black rice has a lot less sugar than blueberries. Anthocyanins have been linked to improving mental clarity, memory, focus and reduced risk of cancer and heart disease. Lastly, black rice has anti-inflammatory properties, so the more black rice you add to your eating, the less inflammation you may have. Here is a quick recipe for those who don't have time to cook healthy meals. Before you step in the shower put on a pot of black rice and a pot of mixed frozen vegetables. When you get out of the shower, you will have a meal that can last for a few days. Here is the recipe: 2 cups of mixed frozen vegetables 2 cups of black rice Add 1/2 tsp of Earth Balance Soy Free Vegan "Butter" Spread 1/4 cup of Kirkland's No Salt Organic Seasoning You can also experiement and add onions and garlic to taste.
